Easy Strawberry Topping

This is a super easy topping to accompany your cheesecakes, cakes, yogurt, ice cream, waffles, pancakes… pretty much anything. You can definitely make it with fresh strawberries but I just use a mixture of frozen sliced and/ or whole strawberries. I used them frozen but you can thaw them before making this too!

This topping goes really well with my mascarpone cheesecake recipe!

Easy-peasy Strawberry Topping

Ingredients:

  • 1 pound of frozen sliced and/or whole strawberries

  • 1/4 cup granulated sugar

  • 1 tablespoon lemon juice

  • 1 tablespoon corn starch

  • 1 tsp vanilla extract (optional but it’s a nice little addition)

Directions:

  1. Add strawberries, sugar, lemon juice and corn starch to a medium saucepan over medium heat. Stir mixture to coat the strawberries in the sugar, lemon juice and corn starch.

  2. Bring the mixture to a boil (this may take a little longer if you are using frozen strawberries). Reduce the heat to low, and simmer for 5-10 minutes or until the mixture is thick enough to coat the back of a spoon. Remove from heat and add the vanilla, if using. Allow to cool to room temperature. Stash in the fridge until you are ready to use. Once cooked, the mixture can also be frozen! Enjoy!
