Pineapple Salsa
You might be saying fruit in salsa? And the answer is yes. The pineapple in this salsa is really fresh and adds a nice sweetness and acidity. If you have a ripe avocado hanging around, add it too! It is great with tortilla chips or as a topping for fish tacos. Add a can black beans and it makes a great summer side salad. This recipe works best with fresh pineapple so avoid using canned pineapple if you can. I hope you love it!
Pineapple salsa
Ingredients:
3 cups fresh pineapple, diced
1 cup tomato, diced
1/2 cup red onion, finely diced
1 jalapeno, finely diced (you can remove the membrane & seeds if you don’t want the heat or replace with red bell pepper)
1 avocado, diced (optional)
1-2 limes, zested & juiced
1/2 cup fresh cilantro, finely chopped
Kosher salt & black pepper
Directions:
Dice the pineapple and tomato (and avocado, if using) to a similar size piece. Chop the onion and the jalapeno to a similar smaller dice. Finely chop the cilantro.
In a medium bowl, mix the chopped fruit and vegetables. Zest one of the limes into the bowl. Add the cilantro and season with salt and pepper. Juice the lime into the bowl as well. Taste the salsa: if it needs a bit more acidity, zest and juice the other lime as well.
Serve with tortilla chips or use it on tacos. Or add a can of black beans and serve as a salad.
