Cherry Chocolate “Black Forest Cake” Energy Bites

Do you like Black Forest Cake? These energy bites are right up your alley! They are perfect if you need a little afternoon boost and a sweet treat. And really, who doesn’t need a little sweet treat to get you through the day right now? These come together super quickly in a food processor or blender. I hope you try and love them!

Cherry Chocolate Energy Bites

Ingredients:

  • 1/2 cup walnuts (or almonds)

  • 1/2 cup old-fashioned or rolled oats

  • 1/4 cup cocoa powder

  • 1 cup pitted Medjool dates

  • 2 tablespoons almond butter

  • 1 teaspoon vanilla extract

  • 1/4 teaspoon kosher salt

  • 1/2 cup dried cherries (you can pulse these into the mixture or add them in after to have pieces of cherries in your bites)

Directions:

  1. In the bowl of your food processor or in your blender, add all of the ingredients. Hold off on the dried cherries if you would prefer to have pieces of cherries in the bites instead of the cherries mixed into them.

  2. Pulse the ingredients until the nuts and dates break up and form a mixture that can hold its shape when you press it with your fingers. If it doesn’t hold, you can add one to two more tablespoons of almond butter until it holds together.

  3. If you would like a sweeter or more chocolatey energy bite, you can add 1/2 cup of mini chocolate chips.

  4. Store in an air-tight container in the fridge for a week!
