Banana Bread Oatmeal
Are you like me and have a bunch of bananas in your freezer? Do you need another idea of what to do with them besides smoothies, muffins and banana bread? Try my banana bread oatmeal. This comes together really quickly for the weekday rush or for a leisurely weekend breakfast. You can also use fresh bananas if you have those handy! And, it reheats really well the next day. I hope you love it!
Banana Bread Oatmeal
Ingredients:
1 cup old-fashioned rolled oats
1 cup of milk (either regular or non-dairy works!)
1 cup of water
1 tablespoon maple syrup or brown sugar
1/2 teaspoon ground cinnamon
1/4 teaspoon kosher salt
A few gratings of nutmeg (optional)
1 teaspoon of vanilla extract
1 cup fresh or frozen bananas, roughly chopped
Garnishes of your choosing: toasted nuts, sliced banana, dried coconut, peanut butter (whatever your heart desires!)
Directions:
In a medium skillet over medium-high heat, combine the oats, milk, water, maple syrup, spices and salt.
Bring the mixture to a simmer, stirring frequently. Reduce the heat to medium and cook until the oats are tender and the liquid has thickened. This should take about 5-8 minutes. Add the vanilla and bananas (if using frozen bananas, keep the mixture over a low heat so they thaw completely).
Serve immediately alone or with toppings of your choice! If you are reheating, add a bit more milk or water to bring it back to life as the oatmeal will thicken off the heat.
